    planted.chicken fillet Mediterranean with roasted vegetables

    Ingredients

    Garlic clove

    Cherry tomatoes
    Black olives
    100 g
    Agretti
    Fresh basil
    Oregano
    2 TBSP.
    Olive oil
    Salt and pepper to taste

    Preparation

    1. Cut the peppers and zucchinis into even pieces.
    2. Peel the onion and cut it into thick julienne.
    3. Halve the cherry tomatoes.
    4. Wash the agretti, carefully pat them dry and remove the woody stems.
    5. Mix all the vegetables in a bowl, add a crushed clove of garlic, a little olive oil, salt, pepper, oregano and some fresh basil.
    6. Mix the vegetables carefully so that the spices are evenly distributed. Leave the vegetables to marinate for 30 minutes.
    7. In the meantime, preheat the oven or grill to 200°C.
    8. Transfer the vegetables from the bowl to a baking tray lined with baking paper and carefully spread them out evenly.
    9. Bake the vegetables for about 20 minutes or until lightly caramelized.
    10. Heat a frying pan (or grill) over a medium heat. Drizzle some olive oil over the planted.chicken fillet and season with a pinch of salt. Fry for about 3 minutes per side until nicely caramelized.
    11. Roughly chop some fresh basil and season the vegetables with it.
    12. Serve everything together hot as a main course.
