    Ingredients

    Glass of white wine
    1/2
    Glass of vegetable stock
    50 g
    Olives
    250 g
    Cherry tomatoes
    20 g
    Desalted peppers
    2 TBSP.
    Olive oil
    15 g
    roasted pine nuts
    Fresh rosemary
    Fresh thyme
    black pepper to taste

    Preparation

    1. Halve the cherry tomatoes and set aside.
    2. Heat a little olive oil in a pan with a clove of garlic and fry lightly.
    3. Add the peppers and olives.
    4. Add a teaspoon of tomato purée, cook for 1 minute and then deglaze with the wine. Allow the alcohol to evaporate and then deglaze a second time with half a glass of vegetable stock and add the tomato.
    5. Add the herbs, reduce the heat, put a lid on and simmer gently for 25 minutes.
    6. Heat a frying pan with a little vegetable oil over a medium to high heat.
    7. Fry the fillets for 2-3 minutes on each side, remove from the pan and cut into 6 large pieces.
    8. Add the sliced fillets to the sauce and mix carefully. Season with salt, pepper and a little lemon zest to taste.
